Do you ever have one of those days when your afternoon is so buys that your may not be able to have a healthy dinner? We have a day or two each week that we are on the run every afternoon after school or on Saturdays with sports. So I decided to take a little shopping trip to Sam's Club and find myself some quick and easy healthy family dinner ideas. Tyson Homestyle Chicken Fries are delicious and easy to turn into a great meal. So I have taken a family favorite chicken dinner recipe and turned it into a healthy on the go meal.
Tyson Chicken Fries Casserole in a Cup!
1/2 Bag Tyson Homestyle Chicken Fries (I found mine at Sam's Club)
6 Medium sized potatoes
1/2 C. Milk
1/2 C.sour cream
1/4 C.Butter
2 T. garlic salt
pepper to taste
1C. Cauliflower
1 can corn
2 Cups Chicken Gravy
Shredded Cheese for garnishing
Start with Peeling, cutting and boiling your potatoes. Boil them in a 4 quart pan for approximately 25 minutes. While potatoes are boiling Steam cauliflower until tender and place chicken fries on baking sheet and bake according to directions.
Check potatoes for tenderness. When a fork and can stick into them easily drain and place back in pot. Add milk, sour cream, garlic salt, pepper, butter and steamed cauliflower. Mash potatoes mix until smooth. If potatoes are thick add a little more milk.
Cut baked Chicken Fries into fourths. Ready for layering.
Warm up the corn and the gravy.

Take your cups and layer starting with chicken fries. Chicken fries, potatoes, corn, gravy and cheese. Do this 2 times for big eaters and once for your little ones. Make these up your are ready to eat on the go!
