Over the past few weeks I have been doing the Fix 21 program to help me size down a bit. I have been craving Chinese food like crazy. Chinese food doesn't really fit the 21 Fix Meal plan. So I came up with a Healthy Egg Roll that I can enjoy and not feel guilty. Filled with vegetables and ground turkey. You can bake them or fry them (Not so healthy). Even better, my kids love these and eat them all up! They have no idea they are eating there veggies!
Homemade
Egg Rolls Recipe
1 lb. ground turkey
1 T. Soy sauce
1 T. Minced Ginger
1 T. Sesame Seeds
1/2 T. Minced Garlic
Brown turkey with spices.
Add to:
1 bag Asian chopped salad or
2 C. chopped cabbage and 1 C. shredded carrots
1 pkg. Egg Roll wrappers
Combine turkey and salad. Spoon 3 tablespoons into an egg roll wrapper. wrap up and place on baking sheet. Bake or fry according to egg roll wraps. Serve with Sweet and Sour Sauce.
Homemade
Sweet & Sour Sauce
3 T. Ketchup
1/3 C. Sugar
2 T. Vinegar
2 T. Soy Sauce
1t. Minced Ginger
2 T. Orange Juice Concentrate or Pineapple juice
2 T. Cornstarch
Whisk together in a sauce pan. Bring to a simmer for 2 min until sauce turns translucent. It's ready to serve.
