Corn Cutting Tips

The other day a neighbor asked if I was interested in making freezer corn.  I was thrilled. So we went out to here garden at 6:30 in the morning and picked 230 ears of corn and headed home. While talking about the best way to cut it off the cob we looked at several corn cob cutters online.  After doing a little research we decided the one that would work the best was unavailable in our area. So we did the next best thing.  We used what we had and it worked great!

Maple & Brown Sugar Applesauce {Blender Style}

Apple Season is just about here. I love drying, juicing and saucing them.  My kids love to head to grandma's house and pick bushels of them to eat. So this year while canning with my buddies we decide to make Maple Brown Sugar Blender Applesauce.
This apple sauce is so easy to make.  Here is how we made it.

Home Canning 101 Favorite Supplies

I love home canning.  I guess it started when I was young.  I use to help my grandmother can hundreds of jars of fruits and veggies every year.  That was just what she did.  My grandparents never bought a jar of peaches or green beans or corn.  She canned everything.  They always grew a garden and preserved everything. I learned early on how to do these things.  Then as I got older we did less and less.  Until I was married and had kids of my own.  I decided I wanted to can a few things for my kids.  Knowing what is in our food is so important to me.  So I called up my Granny and wrote down everything she told me about canning.  I purchased a book on preserving the harvest and started my canning collection.  My first piece of canning equipment was my grandmothers water bath.  I think it's about 50 years old.  Each year or two I added a piece to my collection based on what I wanted to can that year.  I so far have collected most of my canning supplies and I can can most anything.  So today I am going to share my favorite canning supplies and a few canning recipes!

5 week meal rotation calendar

Ever ask yourself what should I make for dinner??? I do, and it galls me. To understand my frustration let me start by admitting I am not a Type A personality. My craft room has half-finished projects scattered all over it, my house is not spotless or ordered, my children don’t do their chores or homework without constant prodding, and my husband sometimes comes home to a pile of unfolded laundry on the bed and front room full of toys.

I am, paradoxically, a prepper. Emergency preparedness and food storage are right in my wheel house. I get a great deal of satisfaction in seeing my storage shelves fill with food and having enough water to fill a small pool should the need arise.

Because of my love of preparedness and my complete disdain for coming up with a daily menu, I developed what I have named my 5 Week Meal Rotation and made it part of my Command Center {here}.
