Healthy Mexican Lettuce Wraps



This dinner is just to delicious to not share.  I found something similar online over at Damn Delicious that was a vegetarian meal and it sounded good.  But I needed to make it fit my dietary needs and I like meat. So I did a little changing and came up with this easy to make, one pan dish.  My kids (the pickiest eaters ever)  even loved it! It is packed full of veggies, protein and fiber and tastes delish.  This one is going on the menu for sure!

Spiced Banana Bread, 5 Ingredients

  So today I decided to share a family favorite of ours. It is a super easy recipe that everyone will enjoy.  I always seem to have bananas lying.  So you would think we would make bread all the time. But it just takes so much time!  So I started thinking about what could I do to simplify the process and have it taste delish? A few months ago I share a 5 ingredient Pumpkin bread recipe.  So I decided to mix up the ingredients  and turn it into a Spiced Banana Bread.  This stuff is super scrumptious.  Your kids will gobble it down in a few minutes.  It would also make a delicious treat for your neighbor. Just wrap it up and tie it in a bow.

Do you remember way back when you were a kid and Bill Cosby was telling us on TV to buy Pudding Pops?  I just loved those things.  They were the best creamy treat in the frozen food section! But alas one day they just disappeared, never return.  
I miss them.

When I was a kid I loved sour candy.  My friends and I would have a competition to see who could eat the most sour candy at once. Did you ever do that?  We would eat until our taste buds were dead. So when I had the opportunity to head out to my local Walmart to test out the new Zours® Candy by Mike & Ike, I said Heck yeah!! Summer Citrus Slush


A a youth I remember every big summer activity we had this drink that I just loved. We called it SLOP. It stood for Seven-up, lemonade, orange juice and Pineapple.  Put them all together and what do you get?  SLOP! You mix up the each ingredients and enjoy. So I decide to make it a yummy, cool slush that my kids can enjoy on a hot summer day.  I love mixing this up and freezing it in old Ice cream containers and keeping it for a few weeks.  This recipe isn't an exact match but it is delicious and perfect for those hot summer days!

Do you have a wake up and go routine??  I try most days to get up and go to the gym then come home and get my kids on the bus. We go to school crazy early.  The bus comes at 7:30.  So my kids have to be fairly responsible  and get up and get going  on there own.  I am one of those moms that who makes my kids do their own lunch and then they have to have a healthy breakfast.  Like Eggs and bagels kind of breakfast.  I find that my kids do better in school when they have a breakfast packed with protein.  So when Carnation Breakfast Essentials came to my home, I was ecstatic to find out that each serving has essential vitamins and  13 grams of protein!  And its so easy to make my 6 year does it on her own!

A few weeks ago I was planning an activity for a few of my young women.  I decided to teach the girls how to make Creme Brulee and Homemade Tortillas.  The Creme Brulee was to die for and I loved to tortillas.  At the time I was getting ready to start my 21 day fix.  So I wanted to make the tortilla recipe a little healthier so I went to work trying a few different things and came up with this delicious recipe. I am a total kid of the 80's.  Neon, Cyndi Lauper, Garbage Pail Kids and Cabbage Patch Dolls.  I remember it all.  There were so many foods I loved that are no longer on the market.Some of you may have remembered the Mars company had 4 kinds of Twix Bars.  Caramel, Peanut Butter, Cookies and Cream and Chocolate.  All of them are super delicious.  But, over time they slowly pulled each from the market except the caramel. So recently I started having a hankering for the Peanut Butter Twix. So I started thinking how could I make those. Best Crock pot Rotisserie Chicken you have ever eaten!




So a few weeks ago I started a 21 day program.  I am trying to get off those stubborn 15 pounds that keep bringing me down. So I have been looking for recipes and foods to help me on my journey. I love rotisserie chicken. Like the ones you get at the supermarket for $5.  You can use it in salads, sandwiches, wraps or just to eat. Just about anything you use rotisserie chicken for. I love the flavor and the ease that comes with buying one and and having it ready to eat. So when I was finding foods to eat for my 21 day fix I wanted to make my life as easy as possible and still eat clean. So I took a recipe from a recipe book that was for grilled chicken and made it in the crockpot.  It tasted just like the rotisserie chicken you buy in the store, but better. Juicy and already pulled off the bone! I also love having a recipe knowing what spices are in it.  Most of the spices you already have in your pantry.

Fire and Ice Popcorn Recipe

A Few days ago I shared a recipe for Cinnamon Bear Popcorn.  It is super delicious. Crunchy popcorn with a chewy cinnamon bear mixed in. One of my favorites to date. I thought it would be quite fun to add a little twist to it.   I mixed it with a little white chocolate. For a Fire and Ice Popcorn.  It is so easy to make and everyone will love it!

Cinnamon Bear Popcorn {Recipe}



Lets start with a little story from the past.  When I was pregnant with my oldest I had crazy cravings. I would crave steak, orange juice, watermelon and cinnamon bears.  I just couldn't get enough. Now I have always likes these food but pregnancy took them to a whole new level.  I think we ate steak 4 times a week.  Watermelon and orange juice were always in the fridge and the cinnamon bears... Well my husband did his best to keep them out of the house.  
One evening we were driving home from the in-laws when I said to him, "Hey stop at the store, I want cinnamon bear."  He did not want to stop.  He was bent on not stopping.  To say that we got into a tiff was an understatement.  
Now every woman knows and so does my husband know. When you have a craving you need to eat it!  Any usually its not the whole bag or carton. Just a few bites or an handful of the treat.  
So I threatened him.  I told him even if he wouldn't stop I would get into my own car when we got home and go get them myself.  So he stopped! (small victory!!) I grabbed my bag of cinnamon bears and ate a handful the rest of the way home.  I was a happy girl with a happy fetus inside.  
Ever since then I have always loved cinnamon.  Bears, chocolate covered ones or chewy cinnamon in any shape!

Over the past few weeks I have been doing the Fix 21 program to help me size down a bit.  I have been craving Chinese food like crazy. Chinese food doesn't really fit the 21 Fix Meal plan.  So I came up with a Healthy Egg Roll that I can enjoy and not feel guilty. Filled with vegetables and ground turkey.  You can bake them or fry them (Not so healthy).   Even better, my kids love these and eat them all up! They have no idea they are eating there veggies!

Homemade Chicken Noodle Soup {Recipe}


One of my Favorite meal my Grandma made me as a kid was Homemade Chicken Noodle Soup. She would bring it down when I was sick, On a cold snowy day or just because she knew I was coming. When I got older she shared the recipe with me but it just didn't taste right. Until years later she shared her secret with  me.  She secretly added Turnip and Cabbage to her soup.  It makes it  taste delicious.  She was so sneaky. My dad didn't even know it.  I feel privileged she shared her secret with me. So today I am sharing my recipe with you!

So a few weeks ago I was a having a class activity for Young Womens. My girls wanted to learn how to make Cream Brulee.  I said why not I have never had it before.  Jaws dropped at the thought that I had never had it.  So we started a batch and made it for our activity.  I had always thought that Creme Brulee was for rich people in fancy restaurants. You know the hoity toity type.   
Well that night I tried Creme Brulee for the first time and loved it!! The flavor the blow torch all the good stuff.

My 5 Go To Freezer Meals Tips and Tricks


I love having dinner all done and ready to go.  But some days are better than others.  With 4 kids I am constantly on the go.  On those busy days I still want my kids to have a good, well balanced meal.  So that's when I turn to freezer meal.  I whip these yummy dishes up and throw them in the freezer.  I pull them out in the morning and they are ready to bake by evening.  Add a veggie and you are ready to go!

So I asked her to dig through her pile of old recipes and she came up with this one.  Knock off Oh Henry Bars.  Yummy Peanut Buttery, butter-scotchy chocolate goodness!  You can thank me later!
